Very rare is it that you’ll find someone who doesn’t love a classic Mac & Cheese; made that so much better since you’re making it from scratch so you know exactly what goes into it. A flavoursome way to add some health foods in too with the addition of spinach – and why not add some grilled chicken too if you need to satisfy your protein fix!

Serves: 3 – 4 people
Ingredients
- 300g dry pasta (macaroni or spirali)
- 125g spinach
- 500ml milk
- 250g grated Cheddar cheese
- 1 tbsp butter
- 2 tbsp cornflour (cornstarch)
- black pepper for seasoning
Method
Step 1 – Bring a pan of water to the boil and add the pasta; cook according to the packet instructions.
Step 2 – Microwave 500ml of milk for two minutes or until slightly warmed (to help the sauce thicken quicker in a later step).
Step 3 – In a hot frying pan, melt the butter and add the cornflour. Stir and cook for a minute, then add the milk gradually, whisking continuously. Stir the sauce until it is thickened, remove the pan from the heat and add a pinch of black pepper.
Step 4 – Add the spinach and grated cheese and stir into the sauce until the cheese has melted. Set aside until the pasta is cooked.
Step 5 – Add the drained, cooked pasta to the sauce, stir and serve with an extra grating of cheese if desired. For additional protein, add some chopped grilled chicken!
Step 6 – Any leftover sauce will keep for a couple of days in the fridge or for up to three months in the freezer. Defrost and heat with an extra splash of milk until piping hot before stirring through freshly cooked pasta.
