Serves: 1 person
Ingredients
- 2 eggs
- 1 red chilli
- 100g mixed crab meat
- a dash of semi-skimmed milk
- 1 tsp mayonnaise (optional)
Method
Step 1 – Top, halve, de-seed and dice the chilli.
Step 2 – Mix the crab meat, diced chilli and optionally, one teaspoon of mayonnaise together in a bowl.
Step 3 – Carefully crack two eggs into a bowl or jug. Add a dash of milk and a pinch of black pepper. Prick the egg yolks with a fork, then gently whisk to create a marbled effect (we are aiming to emphasise the egg whites when cooking).
Step 4 – Using a medium-large frying pan, melt a small knob of butter at a medium heat before adding the egg mix into the pan. It should not sizzle, we are looking to slowly cook the egg.
Step 5 – After a minute or two, add as much crab/chilli mix as desired. Allow to gently cook through and optionally, add some chopped coriander for some extra flavour.
Step 6 – Add some carbohydrates to go alongside this protein-rich meal and enjoy!
